Easter is coming up this weekend and here is the perfect thing to serve. It is a colorful, healthy treat to celebrate the day. It only takes 5 minutes to make and it serves 2.
1 cup coconut milk (full fat, canned)
12 oz frozen raspberries (organic is best)
3 tbsp grass fed gelatin
Stevia OR RAW honey to taste (please try stevia to start and if you know that the flavor of stevia is a bit too much then put a dash of stevia and dash of honey
Put all ingredients in the blender except the gelatin.
Pulse the ingredients in the blender everything is smooth.
Gently stir the mixture a few times while pausing the blender.
Pulse the blender a few more times to combine.
Add the gelatin slowly while the blender is going for a few more seconds.
Serve and enjoy.
Tip: Using a lot of frozen berries and just a small amount of coconut milk will make this recipe seem like instant ice cream.
