Make Keto-Friendly Veggie Waffles

All you need is a regular waffle maker to make these crisp, handheld fritters.   No waffle maker, no issue, pan-fry them into crispy pancakes.

 

You can swap in your favorite shredded greens (or any leftover vegetables in your fridge that need some love) for a dippable, brain-boosting side dish that everyone will love.

 

INGREDIENTS

 

1 organic zucchini

1 organic red bell pepper

2 organic sweet potatoes

1-cup organic carrots, shredded

1/2 organic yellow or white onion

1 cup of organic broccoli slaw

3 large pastured raised eggs1/4 cup Hazelnut Meal flour

1 tsp baking powder

 

INGREDIENTS FOR “ANTI INFLAMMATORY” SAUCE:  YOGURT-DILL SAUCE

 

8-10 oz. Greek or cream top or coconut yogurt

2 tablespoons Brain Octane Oil

2 tablespoon fresh dill, chopped

2 tablespoon minced green onion or scallion

2 tablespoons fresh lemon juice

Dash sea salt

Dash pepper

 

 

INSTRUCTIONS

 

1.  Either mix together with hand blender or in a bowl with whisk.
