INGREDIENTS for foil packets
2 – 4oz. halibut fillets
2 cups kale, chopped
½ cup pea pods
½ cup purple onion, chopped
1-teaspoon curry powder
1 tablespoon avocado oil
Sea salt and pepper, to taste
1. Lay out 3 large sheets of heavy-duty foil. Divide vegetables in 2 and put a mound on each of the sheets of foil. Salt and pepper them and top with curry powder.
2. Put the fish on top of the vegetables; season with salt and pepper and drizzle avocado oil. Add a splash of water or bone broth. Bring the short ends of the fold together and fold twice to seal; fold in the sides to seal, leaving room for steam.
3. Grill – heat it to medium high heat. Grill the foil packets until the fish is just cooked through, 10 to 12 minutes. Make your sauce while packets are cooking.
4. Let the packets set for 5 minutes after cooking, then CAREFULLY open, serve on plate and put sauce over the top, it will melt over that warm food and be delicious.
